For the villagers, the 11th November means the leasing payment date. The autumnal celebrations are bathed in the sunlight of "St. Martin's summer" as the locals say, also marking the end of the hard work to be done in the fields. Barns, sheds and cellars are filled with food in preparation for the winter.

Despite the change in habits and lifestyles, Ajoie has preserved its tradition of the St. Martin feast, savoured by the enthusiasts of a countryside cuisine that involves preparing a pig butchered for the occasion in several ways. From black pudding to roast meat, from jelly to hams,the inhabitants of the village know a million and one ways of cooking pork-based dishes for the occasion, a knowledge that is passed on from one generation to the next.
