Apple wine soup with roast beef

Because of the amount of top-quality apples grown there, canton Thurgau is referred to as the cider capital of Switzerland. In Thurgau the roast isn’t marinated in red wine, as is tradition, but in apple wine, apple juice and sometimes even in apple vinegar.
