The Frenchman Claude Legras has been conjuring up his dishes on the banks of Lake Geneva with passion and an open, extremely inventive spirit since 1997. He stages them artistically and combines them daringly: foie gras with cocoa, for example, or sweetbreads with tonka beans. Guests and critics are equally impressed.
