In summer, wine-makers cut some of the unripe grapes. They are pressed, filtered and pasteurised to make "verjus de raisin", a delicately acidic substance that can be used as a substitute for vinegar or even to make cakes. The tasty juice of green grapes is alcohol-free and naturally cloudy.
