The Jura speciality "Truite du Doubs" gets its name from the river that forms its border. Even just fishing in one of Europe's most beautiful rivers is an experience. Simply seasoning with salt, pepper and parsley and flambéing with wine brings out the delicate flavour of this fish. Seasoned with "Butterflöckli" (butter flakes) and served with bread and Chablis or any other sparkling dry wine, this is a true culinary delight.
