The Saxer butcher's business was set up in 1959 by Jakob and Berty Saxer in Sta. Maria. The hay flower "salsiz" sausage is made mainly from local ingredients in their own sausage-making premises, and then pressed and matured in a number of stages on beds of hay flowers under pine boards. During this maturing process it absorbs the sweet flavour of the hay flowers.
