When thinking of Vaud specialities, the famous "saucisson" (a large, smoke-cured sausage) comes to mind first. But the Vaud area around the Lakes of Neuchâtel, Murten and Geneva, and especially Lac de Joux, has rich fishing grounds. One should not forego such culinary specialities as smoked fish or a delicate fish soup with fillets of Vaud perch.
