Perfect with a Glass of Federweisser

The onion, called “Bölle“ in Switzerland, is a favorite with the inhabitants of the Rhine region. Not only the people from Basel, but also the citizens of Schauffhausen have created their very own “Bölletünne“. This is a truly substantial dish. Besides onions, heavy cream and eggs, bacon bits are added. After it is slow-fried (traditionally in pork fat) the onion pie is ready for the table. A young white wine, naturally from the countryside around Schaffhausen, is the best accompaniment.
