Cheese is the hallmark of Swiss cuisine: on every alp, cheese is being made - but each cheese is different, and each cheese dish has its own charm. In the canton of Vaud, people like to eat "croûtes au fromage," slices of bread with melted cheese on top. Dip your bread slices in white wine, cover them with thick layers of cheese and put them in the oven till the upper crust is melted and golden yellow.
