How the sweet flat cream cake, a staple not to be missed at any celebration in the canton of Vaud, came to be called "Salée sucrée" (salted sweet,) is anyone's guess. One has to admit that this yeast pastry made from cream, sugar and cinnamon does taste good and indeed goes down well white wine too. However, a French Swiss speaking of "Salée" (salted) usually does not mean the sweet flat cake, but rather the salty version with bits of bacon on top.
