Intro

The Swiss Alpine herdsman’s Macaroni with applesauce are as Swiss as the holes in Swiss cheese. It took a long time, before this special meal found its way from the pastures down to the valley.

 

Basic ingredients for Swiss Alpine Macaroni include potatoes, macaroni, cheese and onions. Of course, there are several variations of this popular recipe, but no matter how this rustic delight is prepared, you'll love it.

 

Step 1    
Cut onions into rings, garlic into slices and potatoes into cubes. Brown bacon, onions and garlic in a non-stick pan, remove and set aside.
    
Step 2    
Bring stock and cream to the boil, add potatoes and pasta, cover and simmer over a low heat for approx. 10 min until cooked al dente and the liquid has been absorbed.
    
Step 3    
Mix in the cheese and season. Sprinkle with the bacon and onion mixture.
    
Serve with: apple purée
