Autumn is the time for mushrooms



Morels can be found as early in the year as spring, and in July resourceful collectors can look forward to finding summer ceps. But mushroom season doesn’t really start until the end of August or early September, depending on the weather. Humidity is a positive factor, by the way, although if there is too much of it, it can also be problematic. If everything falls into place, both restaurateurs and their guests will benefit. Whether from chanterelles, ceps and porcini mushrooms, or from cultivated on-trend mushroom species: many restaurants are putting traditional or contemporary mushroom dishes on their menu. We have drawn up a list of 14 restaurants where mushroom fans will feel well taken care of.
