At Le Soleil restaurant in Châtillon, just outside Delémont, Chef Clément Bourgeois marries his twin passions: fine dining and nature.

An alum of Maison Wenger in Noirmont and the man behind La Teinturerie in Jura's capital. Bourgois serves sophisticated cuisine that is firmly rooted in the region.
