Seit Jahrhunderten werden in Japan Lebensmittel mit Hilfe von Koji (麹) – einem natürlichen Edelschimmelpilz (Aspergillus oryzae) – fermentiert.
Jetzt bringen wir diese Tradition ins Engadin.
Wie verwendet man Koji?
Wir zeigen es euch – mit einem kleinen Koji-Menü und einer feinen Verkostung
