Our philosophy: sustainable and regional
Information
Description
Honest, local products, as well as old, almost forgotten vegetables, we obtain from our local producers, farmers and fishermen. Therefore, we pay attention to the highest quality and sustainable cultivation in all our products, from wine to flower.
In addition to the well-being of our guests, sustainability is also close to our hearts. We make a great effort in terms of sustainability with our GAMMAGARTEN: Since 2018, we have been cultivating rare ProSpecieRara vegetable varieties, tasty herbs and the finest tuberous plants on leased land. This is how we bring a lot of enjoyment and even more sustainability to the table. In order to be able to offer fresh vegetables all year round, seedlings are planted little by little. Zero waste is also an important requirement for us: thanks to the creativity of our GAMMA chefs, really everything is recycled. And whenever vegetables cannot be served directly to the guest, the GAMMA kitchens produce by-products. But it is not only in the garden that we are committed to sustainability: After all, the vegetables arrive in our kitchens without packaging in reusable crates.
