Step 1

Clean the mushrooms and cut them into quarters. Remove the tough stems from the shiitake mushrooms. Cut the peppers and gherkins into strips.

Step 2

Heat the oil on high and fry the mushrooms well for 10 to 15 minutes. Add the peppers and briefly braise. Season and deglaze with the brandy, balsamic vinegar and red wine. Allow the liquid to boil down a bit.

Step 3

Add the stock and culinary cream and boil down to the desired consistency. Just before serving, stir in the gherkins.

TIP

Serve with crispy fried rösti and garnish with a tablespoon of sour cream.
