Overview
Intro
Leonardo Bürgi Tenorio’s installation explores fermentation with kōji as a way of connecting humans and nature. Workshops, tastings and conversations make the process a sensory experience.
Leonardo Bürgi Tenorio presents an installation based on his ongoing research into fermentation with the mold Aspergillus oryzae, also known as kōji. Through a site-specific installation, he approaches the question of how humans cultivate relationships with their natural environment from both artistic and philosophical perspectives.
Conceived as a "fermentation laboratory," the installation invites visitors to become part of this process through workshops, tastings, and open conversations. Rather than explaining fermentation, it offers a sensory experience through smell, materials, touch, and taste. Visitors move through a space where human and more-than-human actors interact, and where artistic practice is understood as a form of cultivating relationships and care.
On the afternoon of 30 August, the installation will be further activated in collaboration with Poly Amoral Test Kitchen (Madeleine Noraas).
This installation takes place as part of "Culinary Infrastructures".

Leonardo Bürgi Tenorio (b. 1994, Basel) is an artist whose practice centres on installations, sculpture, drawing, and culinary projects that explore the relationship between humans and the natural world. In his installations, he works with a wide range of materials, combining traditional artistic media—such as drawing and ceramics—with organic elements including plants, soil, fungi, and other materials drawn from nature. These living and perishable components may continue to evolve or decompose over the course of an exhibition.
