More and more olive trees are being planted in French-speaking Switzerland, yet there is almost nowhere to learn how to care for them. So we went looking for the people who know — and we're bringing them here.
Three days in Nyon, on La Côte, with three specialists who almost never teach in Switzerland.
Our intensive training covers the full olive production cycle, from planting to marketing, with recognised experts in the field.

Starting an olive-growing operation
* Choosing the plot (soil, exposure, climate, previous crops)
* Choosing varieties and nurseries — and how old should the young trees be?

Introduction to oleology
* The fundamentals of olive oil production
* Classification based on organoleptic and physico-chemical assessment; regulations (IOC, EU)
* How virgin olive oil tasting works: differences in quality, differences in intensity, the three fruitiness profiles
* Tastings: single variety, terroirs, ripeness index…
* Focus on the three fruitiness profiles: ripe fruity, green fruity (mild to very pungent) and matured olives
* Understanding and distinguishing the positive attributes of virgin and extra virgin olive oils
* Learning to recognise a virgin and an extra virgin olive oil
* Working on defects
